Sugar-Topped Blueberry Muffins

Baking blueberry muffins + sipping a giant mug of coffee + listening to folksy music + the first day of summer vacation = awesome.

This recipe is for fluffy, white, blueberry muffins. I don't make them that often but they're a once-in-awhile treat.

The recipe is from Martha Steward Living.

Blueberry Muffins
Makes: 6 large or 12 small

6 tablespoons unsalted butter, room temperature, plus more for tins
3 cups plus 2 tablespoons all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 1/4 cups sugar, plus more for sprinkling
1 large egg
2 large egg yolks
1 teaspoon pure vanilla extract
1 cup milk
1 3/4 cups blueberries

1. Preheat the oven to 375 degrees. Butter large (3 3/4 inches) or small (2 3/4 inches) muffin tins, and set aside. In a large bowl, sift together flour, baking powder, and salt; set aside.

2. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until fluffy, about 3 minutes. Add egg, egg yolks, and vanilla; mix until well combined.

3. Reduce speed to low; alternate adding reserved flour mixture and milk to mixer, beginning and ending with flour.

4. Remove bowl from mixer; gently fold in berries by hand.

5. Divide batter among muffin tins; sprinkle generously with sugar.

6. Bake until light golden, about 45 minutes for large muffins, about 30 minutes for small muffins.

7. Cool in pan 15 minutes. Remove from pan; transfer to wire rack, and let cool completely.

Note 1: I only had to cook mine for 25 minutes.

Note 2: If you have a one year old puppy that you just adopted and who really likes food, don't leave a pile of muffins near the edge of the counter. Your muffins won't look pretty for long. ;)

  1. yum, they look delish! and i'm loving your egg photo ~ that would look so cute hanging in a kitchen (mine for instance!) :)
    enjoy your muffins!

  2. They look yummy! I made blueberry muffins yesterday, but I'll have to try again with your recipe.

  3. I made blueberry muffins this morning too! (Got the big box of fresh blueberries from Costco, what else could I do?) I laughed right out loud when I read your note number two-I can just see that new puppy bouncing in the air! Hee hee! : )

  4. Thanks for the yummy recipe!! Your pics are so pretty!!

  5. Ooh, these look so good! I love blueberries and have been craving some baked goods using these berries...think I will have to try your recipe!

  6. Mmh! I think that are very very good!
    Bye Bye by Francy

  7. I love the shots you took of the eggs and the bowl of blueberries!! and I bet the muffins were delicious too!!

  8. Yum, there's nothing like homemade muffins for breakfast. I have a sweet treat linky party going on at my blog till Monday night and I'd love it if you'd come by and link your muffins up.

  9. Your use of the 50mm lens is awesome. Makes me giddy and proud :D and so well staged, framed, and shot!

My only regret is being so far away from any ovens to actually have a chance to cook!

  10. Could I use frozen blueberries? Would that be terrible for the recipe?

  11. Yes, you can use frozen blueberries!

I do all the time.... you just may have to cook the muffins for an extra minute or so.

  12. Today I made this muffins. They are so delicious!! Greetings from Poland :)
